Pancit

For those of you who don't know me, my beautiful momma is from the Island of Guam. Not very many people know where it is or know it even exists. Well here's a little history lesson it's one of the five U.S. territories and was invaded by the Japanese a few hours after the Pearl Harbor attack.

My mom was just a baby when they made the move from Guam to California, she was the youngest for a long time #8 of 10. My grandparents were married for over 55 years, had 10 children, had 31 grandchildren, and over 35 great-grandchildren. They were a beautiful example of marriage and family. My grandpa cherished my grandma and she took care of him. I sure miss them, and think about them every day. Anyways, this recipe is actually given to me by my Auntie Lorraine, she's #3 of 10. Pancit is like a chow mein, you can use different kinds of meat or even make it with all veggies.

Ingredients
1 PKG Rice Sticks
2 Tablespoon Butter
1/2 Green Pepper
1 cup chopped carrots
1/2 onion
1 pd steak, chicken, or pork
2 TBSP Brown Sugar
1/2 cup soy sauce
Garlic Powder & Black Pepper to taste

Directions
Set Rice Sticks in hot water and leave until ready to put in pan
Put Butter in skillet and let melt
Add meat and onions (Brown)
Add Brown Sugar stir fry for a few minutes
Add Soy Sauce and fry for a few minutes
Add Veggies stir fry
Add touch of garlic powder and pepper
Add noodles stir fry. Let pancit sit for 20 minutes and then serve.

  1. Ahhhh!!!! I LOVE this stuff! My dad makes this every single time that I go home. I could eat it for days. And days. I've never attempted to make it though. Your recipe looks great & makes me miss home.
