Weekend Breakfast

Every weekend my pilot makes me breakfast. Yes, you read correctly, my sweet husband makes me breakfast at least once a week. I have to admit it's nice to have a little break from the kitchen. I'm not 100% sure when our weekend breakfast tradition started, but I think one day my husband asked me to make waffles and I said, "I don't know how to and I don't like them...so no," subsequently he decided to make them himself. I know what you're thinking, how I can I not like waffles? It's more so the maple syrup I'm not a fan of, the smell of it really doesn't agree with me. Anyways, breakfast usually consists of waffles, maple brown sugar sausage or bacon, hash browns, and eggs. I felt bad Derek kept making waffles and here I was only eating a quarter of it. I started using nutella, cool whip, and fruit. It's SO. STINKIN. GOOD.

Yesterday, we went to a diner for breakfast while we were out running errands. As I'm sitting there eating my chicken fried steak with eggs and hash browns, I was thinking to myself I wish we were home. I wanted the waffles. Breakfast out just isn't the same anymore, I've been way too spoiled by my man. I'm so lucky to have a husband who has goals, treats me like a queen, and does anything he can to make me happy. He makes this crazy unpredictable life as a pilot's wife worth it. Enough with the sappy stuff, here's our recipe for waffles given to us by Derek's mom. We usually cut the recipe in half since it's just the two of us.

Ingredients
2 cups flour
4 teaspoons baking powder
1 teaspoon salt
6 Tablespoon oil
2 Tablespoon sugar
3 eggs
1.5 cup milk

Directions
Heat up your waffle iron. Mix all ingredients together in a bowl with a spout. Spray hot waffle iron with cooking spray and pour batter in. Cook each waffle for approximately two minutes. Top waffles with whatever you choose and serve with maple brown sugar sausage. Enjoy!
