Black Bean Burritos

 
This recipe literally takes 20 minutes to make. I can't remember where I found it, I know it's somewhere on a blog. The pilot was a little hesitant to try it, but he ended up loving it!

Ingredients
2 cans of black beans
4 oz. cream cheese
2-3 cloves of garlic
1 half yellow onion
1 half red pepper
1 half jalapeno
Pinch of Salt
1 tablespoon olive oil
Cheddar Cheese

Heat up skillet with olive oil. Mince garlic and cut up red pepper, yellow onion, and jalapeno. Set aside jalapeno with a few of the seeds. I don't like spicy food very much so I only add a few jalapeno seeds, add more if you like it to have more of a kick. Saute garlic, onion, and red pepper for a few minutes. Then add the jalapenos with a few seeds and saute until onions are translucent. Drain and rinse black beans add to the pepper, onion, jalapeno mix. Add pinch of salt. Cut up the cream cheese into small chunks and melt into mixture. Warm up the tortilla in the microwave for about 20 seconds. Put black bean mixture into tortilla, sprinkle with cheese and serve. Sometimes it helps to use a tooth pick to keep it together.
