
This is my husbands absolute favorite meal for me to make and it's one of the easiest. You'll need a crock pot for this one. I found this recipe in a newspaper back when we were going to college in Utah, I don't remember who the person submitting the recipe was though. I recommend giving it a try at least once and serve it with french fries or chips. You won't be disappointed.
Ingredients:
1 1/2 cups beef broth (I use 2 beef bouillon cubes)
1 cup water
1/2 teaspoon salt (optional, I never include it with the Italian dressing mix and onion salt it's too much)
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon onion salt
1 teaspoon parsley
1 teaspoon garlic powder
1 bay leaf
1 (.7 oz) packet dry Italian-Style Salad Dressing Mix
1 Chuck Roast
Swiss Cheese Slices
Hard Rolls
Combine water and beef broth with all of the seasoning, whisk to combine. Place roast in slow cooker and pour salad dressing mixture over meat. Cover and cook on low for 8-10 hours or on high for 4-6 hours. Shred and let soak in the juices for about 10-20 minutes.
Heat broiler. Butter each roll and then place Swiss cheese on the bottom of each roll. Place under broiler until the cheese is melted. Assemble sandwich and use extra "au jus" for dipping. Serve and Enjoy.
