Marrying my husband isn't my first experience with the military. I'm an Air Force brat. My dad was in the Air Force for 26 years, my older brother was in the Navy and now in the Army, my older sister is in the Air National Guard. Moving around is the only life I've known and I wouldn't have it any other way. It's not easy by any means, but in all honesty I don't think I noticed how hard it was until I was a spouse myself. Trying to get everyone and everything organized for a move can be quite overwhelming. How my parents or anyone for that matter can do it with small children amazes me. I really admire my mom and dad, I think they did a good job juggling three kids and moving around. They were high school sweethearts and have been married over 30 years, believe or not they are still madly in love with each other, it's kinda gross. :) I'm kidding, I love having parents who are good examples of what a marriage should be. I'm sure they had their ups and downs like any relationship, but they stuck it out and changed together instead of falling apart or giving up. Anyways, both my parents are great when it comes to nursing people back to health. Whenever I was sick my dad would always make this drink mixed with Gatorade and 7-up, it was really good while also helping settle the stomach and keep you hydrated. My mom would make this soup, I find if I'm feeling homesick this is my go to recipe to feel a little at home. I hope you enjoy it as much as I do!
Ingredients
1-2 cans of corn (Do NOT drain, you'll need the juice)
1-2 cups carrots
1 bag frozen corn
2-3 peeled and diced potatoes
2 cans cream of chicken
1 or 2 packets of chicken bouillon
Season salt and pepper to taste
1-2 cups of water
1 canister of Pillsbury dough-boy biscuits (Optional)
In a large pan dump in the can of corn with the juice, carrots, frozen corn, potatoes, cream of chicken, water, and bouillon. Bring to a boil, add season salt and pepper to your liking. Once the potatoes are cooked all the way through the soup is ready. You can add more water if you want it to be more liquified, the way I make it its more of a chowder. Cut the biscuits and drop them in the pot, cook for about 5 minutes, then serve. You don't have to put the biscuits in, they make little dumplings and give it a little something extra.
