Bacon-Wrapped Jalapeno Chicken (Rated 5 per husband)




This recipe takes a spin off of jalapeno popper's. It has cream cheese, jalapenos, bacon, everything you need for a perfect dinner. It usually calls for chicken tenderloins, but wouldn't you know it every time I go to the store to get them they aren't ever there. They are ALWAYS there whenever I don't need them though. I am really picky about chicken and am paranoid it won't be cook all the way through. I try to get thin sliced chicken.

Ingredients
  • 8 chicken tenders, flattened and cut in two (Again I use thin-sliced chicken and cut them in half)
  • 3-ounce package softened cream cheese
  • 1 jalapeno pepper, seeded and finely chopped
  • 8 slices bacon, cut in half
  • Season Salt to taste
  • Pepper to taste
Directions
Put 1/2 tablespoon (more or less) of cream cheese on top of each chicken tender. Divide the chopped jalapeno evenly and sprinkle the peppers over cream cheese. Fold or roll chicken to enclose cream cheese mixture. Wrap each roll with one piece of bacon and secure with a toothpick.Grill until bacon is brown and crispy on both sides. This last time I used the George Foreman and it worked just fine. I still prefer the grilling method though.

  1. OH going to try this one, too. Not a huge fan of jalapeno, but the boys in this house are. I'll use them on my piece. sparingly!!

  2. I'm actually not a huge fan of jalapeno's either, usually I'll just put a little bit on my piece just to get a little bit of the flavor on there and then I'll take it off.
