
I'm very picky when it comes to ribs, but this recipe is so delicious and so easy, sts (so to speak), everyone loves these babies. It takes less than 15 minutes to prepare, and then you just put it in the crockpot. I found this recipe from one of my many nights of blog stalking and recipe searches, unfortunately I don't remember exactly which blog I found it on. I have modified it a bit to make it my own. By the way, whenever I cook in the crockpot I always use crockpot liners, they make the clean up so much easier! I learned how to make the twice baked potatoes by one of our dearest friends Jade. We were visiting her one weekend when we lived in Texas, and she made a wonderful dinner for us. I wish we could have spent more time with her while we were stationed in Texas.
Crockpot Ribs
Ingredients
4 lbs. boneless pork ribs (I always get the country style pork ribs)
seasonings ( I use McCormick Applewood Smoked Rub, Salt, and Pepper)
1 cup chili sauce
1 cup hoisin sauce
1/2 cup brown sugar
3/4 tesapoons allspice
1 cup of water
Season ribs with seasonings, and place in a slow cooker. Mix together chili sauce, hoisin sauce, brown sugar, and allspice and pour over ribs. Add water. Cook on low for 4 hours (this might need to change depending on your cooker, mine tends to cook things really fast). Remove ribs from slow cooker. You have the option to grill ribs over medium heat 10-12 minutes or you can eat them straight out of the crockpot. If you do grill the ribs make sure to turn the ribs often and make another batch of bbq sauce in order to baste them frequently.
Twice Baked Potatoes
2-4 potatoes
1/2 cup Cheddar Cheese
1-2 tablespoons Bacon (I always use real bacon bits)
1-2 tablespoons Sour Cream
1-2 tablespoons Butter
Green onion (optional)
Salt and pepper to taste
Set your oven on Broil. Either bake or microwave the potatoes, whichever method you prefer. After the potatoes are finished cooking once, cut the potatoes lengthwise. Scoop out the middle and put in a mixing bowl. Set aside the skins. Using the potatoes you scooped out, mix together half of the cheese, half the bacon, the sour cream, and the butter. Put mixture into the skins and sprinkle cheese, bacon, and green onion. Broil until cheese is melted. Viola its done!
