I found this recipe a few years ago from Real mom blog, I've made a couple adjustments but this is definitely one we've really enjoyed. You can freeze them and warm them up in the microwave to have something for breakfast on hand. We've recently found these awesome tortillas at the commissary, called Guerrero you should seriously give them a try. The pilot has requested to buy the same ones next time.
Ingredients
1 lb sausage (I really like brown sugar maple)
1/2 bag of Ore-ida Potatoes O'Brein
6 Eggs (scrambled)
1 Tablespoon milk
2 Tablespoons vegetable oil
1/2 cup shredded cheddar cheese
Tortillas
1 teaspoon dried minced onions
1/2 teaspoon dried minced garlic
Season Salt
Freshly ground pepper
Ketchup or Salsa
In a large sauce pan, brown the sausage. In a skillet heat up about two tablespoons of oil, once its hot carefully pour in your potatoes, cook until they are golden brown. Heat up a saute pan, spray the pan with cooking spray. Whisk together eggs and milk, add minced onions, garlic, season salt, and pepper. Pour into hot pan. Cook eggs until they are no longer runny. Sprinkle 1/2 the cheese in the eggs until its melted. Mix sausage, eggs, and potatoes together and put in tortilla. Top with remaining cheese and ketchup or salsa if desired. You can use a tooth pick to keep the burritos together. Enjoy!
