Baked Potato Soup


Well ladies and gents, its officially fall and its my favorite time of year! I love all the colors of the leaves and the cooler weather. However, in Arizona the weather hasn't changed much. So, if I can't have the weather the food is the next best thing. This soup is so delicious and creamy. I serve it with bacon bits and cheese, but I think leftover turkey or ham would be a great addition. To make it even less time consuming, I cook the potatoes in the microwave.

Skin Removed Potatoes
Ingredients
4-5 baking potatoes (skin removed, you could leave them on, its just your personal preference)
2/3 C Unsalted Butter
2/3 cups flour or 1/3 cup of corn starch
1/2 tsp salt
1/4 tsp pepper
4-5 cups milk (You could use skim milk also)
1 cup heavy cream (If you want to make it a little more healthy omit the cream and add an extra cup of milk)
2 sliced green onions
1-2 tablespoons of real bacon bits 
1 C sour cream
                                                                                       1/2 - 2 cups of shredded cheddar cheese

Clean the potatoes, use a fork to poke holes in the potatoes. I have a baked potato button on my microwave, but if you don't try cooking them for 5-7 minutes. Once the potatoes are cold enough to handle peel the skin off then cut the potatoes in cubes. In a large pot melt the butter, and whisk in flour or corn starch. Stir in Salt and Pepper. Add the cream and one cup of milk. Then add remaining milk two cups at a time. Add potatoes and bring to a boil. Stir until its thickened. Turn heat off and then mix in the sour cream. Garnish with bacon bits, cheese, and green onions. Serve with rolls or warm bread. Perfect fall meal! :)
