Orzo Chicken Salad


I'm not a huge fan of chicken salad, it tastes too much like tuna fish. However, when I had this pasta chicken salad I became a BIG fan of this one. I had this at an OSC luncheon, and hounded the host for the recipe. Luckily, she was sweet enough to make me a copy. It's really easy to put together and I haven't had any complaints.

1-1 1/2 cups rotisserie chicken (shredded, you could also roast 4 chicken breasts for 45 mins)
1 package orzo
1 bunch of green onions (only use about 1/2 inch of the green part for color)
1/4 cup sour cream
1 cup light mayo
1.5 Tablespoon lemon juice
1/2 Tablespoon sugar
Cashews
Red seedless grapes (optional)
Salt & Pepper

Boil orzo for about 8 minutes, and drain. While the orzo is boiling shred the chicken and set aside. Chop up green onions. Mix together sour cream, mayo, lemon juice, and sugar. Add green onions, chicken, and orzo. Throw in the cashews and grapes if you'd like. Salt and pepper to taste. You make it ahead of time, when it comes time to serve it just add a touch more of the sour cream and mayo.
