S'mores Cups


What's the best part of camping??? It's the S'mores of course! Apparently, I've been on a little hiatus sorry I didn't realize I've fallen behind. The only excuse I have is I went on several trips, but more so I've been just a little bit lazy.  Not only do they look delicious, they are so tiny and cute. I sent these to work with my pilot, and he came home empty handed. He made the comment yesterday he didn't have a chance to grab one for himself. Poor guy, I guess I'll need to make a batch just for him.

14 whole graham crackers finely crushed
1/4 cup powdered sugar
6-8 tablespoons melted butter
4 bars of milk chocolate (divided)
12 large marshmallows

Makes 24 cups

Preheat oven to 350 degrees. I put the graham crackers in a plastic bags and crushed them with a rolling pin. Mix together graham crackers, powdered sugar, and melted butter. Press down one tablespoon of the crushed graham cracker mixture into each cup of the mini muffin tin. Bake for 4-7 minutes or until the edges are golden brown. Remove from oven and place one rectangle into each of the cups. Cut marshmallows in half and place cut-side down into each cup. Put into oven for 2-4 minutes. Remove carefully and place onto cooling rack. Once completely cooled place the remaining chocolate into a small bowl and microwave 30 second to 1 minute, stirring constantly. Dip each cup in the melted chocolate and let set for an hour.
